Ingredients
250g spaghetti
⅔ cup extra-virgin olive oil
4 cloves garlic, thinly sliced
1 tsp red pepper flakes
2 tbsp fresh parsley, chopped (plus extra for garnish)

Salt and black pepper to taste
Grated Parmesan or pecorino (for serving)
Instructions
Cook spaghetti in salted water until al dente; reserve ⅓ cup of pasta water.
In a saucepan off heat, mix olive oil, garlic, red pepper flakes, and optional herbs.
Carefully pour the reserved hot pasta water into the oil mixture to release flavors with a sizzling effect.
Add drained spaghetti to the infused oil; toss thoroughly.
Season with salt, pepper, and parsley.
Serve topped with Parmesan and extra herbs.
